Above the valley of Beit Netofa and “Mushroom Wadi” dwells a solitary dairy farm called Goat with the Wind (Halav im HaRuach) – an organic farm running an economy that attempts to remain as true as possible to authentic old agricultural traditions.

The farm has a goat herd numbering 150 head, a small herd of sheep and several cows; each one of these animals grazes weeds of a different height.

Milking is done manually. Electricity relies on a solar system; there are no refrigerators and at the restaurant, located at the heart of the farm, the food served is fresh and prepared on location.

Farm owners Dalia and Amnon Zeldstein arrived in this beautiful place after the goat shed in Yodfat closed down. Amnon who used to be Yodfat’s shepherd wandering around with his herd, wanted to continue being a shepherd.

The couple initially settled in a house opposite Yodfat, and several years later moved to their current location in “Mushroom Wadi”, about 2.5km east of Yodfat.

A winding dirt road leads to the farm that is surrounded by a large vegetable garden. The farm itself produces olive oil for its own consumption and wine in a small domestic winery, and supports itself mainly from the restaurant.

The pretty restaurant, sitting amidst untamed nature on stone balconies covered by sheds, serves meals of assorted cheeses based on a fixed menu consisting of 10 kinds of cheese, 3 kinds of salad, leaven bread, herbal tea and cookies.

Each meal begins with a jug of cool rosewater.
